There was some resistance from the wife, Joe.

My wife's Aunt is trying to go meatless more and more, we hardly ever do but should. So I went in on this with her and made a few batches.

When it was just about ready I asked my wife what she'd like with it - I suggested asparagus - she suggested MEAT!

But she and I ate it enthusiastically - it was really really good.

Now I'm not saying don't serve a half rack of ribs with it or what have you...

I get dinner directives from "She Who Must Be Obeyed" at times as well, Todd. It is probably best to listen to those directives. Happy wife, happy life, as the old marriage veterans say!

FYI I used one pkg of fresh spinach which was less than the amount of frozen they asked for. It was spinach-y enough for me that way...but I did fall a little short on filling 9 rolls. Keep that in mind.

Yeah, I too prefer to use fresh spinach in these type dishes. But I do mince the leaves a bit and it seems to blend in better than left full size and is far easier to blend with the other filling items. FWIW, when used in pasta (alfredo) sauces, I find it best to add the minced fresh spinach near the end of the cooking cycle but I realize that can't be done in your lasagna dish.

I have four that I won't be using. They're $80 apiece but I could be talked into less.

Depends on where you're staying and how far you're willing to drive. Mickey's is fun but I'm pretty sure it's in St. Paul. Matt's Bar is my favorite (south of downtown on Cedar Ave) because you can get a Jucy Lucy - the original and still best one IMO. There's tons of good spots.

What's a Jucy Lucy again?

Most of the time we stay in either Bloomington, Eden Prairie, or Eagan.

Juicy Lucy's are the burgers that have the cheese imbedded in the middle so when you take a bite the hot cheese is part of the burger itself, not a slab on top. Just be careful of that first bite because the cheese is hot.

It's not really a bar they just have 3.2 beer on tap. It's a dive but it's famous. Most of the time you have to wait in line outside just to get in.

You've never heard of a Jucy Lucy?

There is another option for a Juicy Lucy besides Matt's Bar too.

A Couple of them actually, but the chief competition is right down the road at 5-8 Club. Both are really good burgers. Matt's Bar is one kind of cheese but it is much better overall. 5-8 club has different versions with different kinds of cheese etc. They also have a larger menu that includes some pretty good fried chicken...
